Our first cooking class is how to cook lamb rack. Lamb rack is one of my favorite dishes to eat. That’s why I wanted this to be my first video. Lamb rack is versatile and best best prepared medium rare either roasted or grilled. It’s an excellent source of protein with a whopping 23 g per 3 oz portion. So lamb is a great meat to eat for your daily macro protein portions. It’s also tender and usually digested easier than its beef counterpart.
Cooking class: Lamb rack preparation
American lamb has typically larger racks and usually has a less gamey flavor then the New Zealand lamb rack I’m using in this video. American lamb is also more expensive. Like anything, you get what you pay for. I prepared this the traditional french way of roasting the lamb rack with dijon mustard and herbed breadcrumbs. I paired it with grapefruit quinoa and sautéed greens with a mushroom and tomato confit sauce.
This is an intermediate level cooking class and is not overtly difficult. You would need to have a base level understanding of knife, searing, and roasting skills. You will need a thermometer to check the temperature of the lamb so you cook it exactly right.
